Try it
Blue, until it isn't.
Azure gets its colour from butterfly pea flowers. Top it with soda and it stays blue, just lighter. Add a squeeze of lemon and it turns pink. Tonic turns it pink straight away.
50ml Azure, 150ml soda and a squeeze of lemon, over ice.

Before you pour.
Is it very heavy on juniper?
Juniper is in every bottle, as it should be. The signature botanicals on each label are what make each gin its own, so Classic tastes nothing like Verdant.
What's horopito?
A native New Zealand plant, also called pepper tree. Its leaves have a gentle, peppery heat, and it's the warm spice in our Classic.
Why does Azure change colour?
Butterfly pea flowers change colour when they meet something acidic. A squeeze of lemon or a splash of tonic turns Azure pink. With soda it stays blue, just lighter.
Is it worth $80?
Every bottle comes off a 300-litre still in Hahei, run by hand in small batches. And 700ml goes a long way: around 23 G&Ts at 30ml each.
Which one should I start with?
If you like a classic G&T, start with Classic. If you want a show, start with Azure. Each gin has our favourite serve on its page.
